Die Trauben wurden von Hand gelesen, sortiert und danach sehr langsam pneumatisch gepresst. Die Klrung erfolgte khl und durch Schwerkraft. Der Saft wurde spontan vergoren und reifte 14 Monate lang in Holzfssern aus
